Ingredients
• 12 oz. pkg black-eyed peas, frozen
• ¼ cup apple cider vinegar or red wine vinegar
• 1 Tbsp stone ground or Dijon mustard
• 1 clove garlic, minced
• 1 Tbsp olive oil
• ½ tsp salt
• 1 stalk celery, chopped
• 4 bell peppers (any color), chopped
• 1 cup sweet corn, frozen
• ⅓ cup cilantro, finely chopped
• 1 ripe avocado, diced
• 2 Roma tomatoes, diced
• Salt and pepper to taste
Directions
Servings: 8
1. Prepare black-eyed peas according to package directions.
2. In a medium bowl, whisk together vinegar, Dijon mustard, and olive oil. Add garlic, salt, black-eyed peas, and remaining vegetables; mix well.
